SAFFRON BIRYANI

THE COMPOSITION

THE SAFFRON INFUSION

Bloom a generous pinch of premium saffron threads in 60 ml of warm water (approx. 65°C). Allow the infusion to develop undisturbed for 25 minutes, yielding a deeply aromatic, amber-hued extract.

THE GRAIN FOUNDATION

  • 300g aged long-grain rice (carefully rinsed and rested)
  • 1.2L light poultry or vegetable stock, gently warmed

PROTEIN ELEMENT

  • 400g free-range chicken, portioned into refined cuts
  • 120g thick cultured yogurt
  • 8 ml fresh lemon juice

AROMATICS

  • 2g green cardamom pods, lightly crushed
  • 1 small cinnamon stick
  • 2 cloves
  • 1 bay leaf
  • 1 small shallot, finely sliced
  • Sea salt, to balance

TEXTURE & FINISHING

  • 40g toasted cashews
  • 30g golden raisins, lightly hydrated

THE ATELIER PROCESS

Preparations

Phase I

Marinate the protein with cultured yogurt, lemon juice, and a restrained measure of salt. Allow it to rest for a minimum of 45 minutes, enabling gentle tenderization and flavor absorption.

Simultaneously, par-cook the rice in lightly salted water until it reaches approximately 70% doneness. Drain and reserve.

AROMATIC FOUNDATION

Phase II

In a heavy-bottomed vessel, warm clarified butter and oil. Introduce the whole aromatics and allow them to release their essential oils. Add the sliced shallot and sweat until softly translucent, building a delicate base without coloration.

LAYERING & INFUSION

Phase III

Layer the partially cooked rice over the protein base. Drizzle the saffron infusion evenly across the surface, allowing it to permeate selectively. Scatter toasted nuts and softened raisins between layers for subtle contrast.

Seal the vessel tightly and reduce heat to its lowest setting. Allow the composition to steam gently for 20–25 minutes, enabling the grains to fully elongate while absorbing the aromatic base.

FINAL INTEGRATION

Phase IV


Remove from heat and allow the preparation to rest, covered, for 10 minutes. Gently lift and fold the layers with a flat spatula, preserving the integrity of the grains while integrating the components.

PRESENTATION

Phase V

Plate in a shallow, wide dish, allowing the rice to fall naturally without compression. The composition should display a mosaic of ivory and saffron-gold grains, interspersed with delicate textures.
