THE CAKE BATTER
THE SAFFRON BLOOM
Pre-bloom a generous pinch of saffron threads in 60 ml of warm milk for a minimum of 20 minutes, allowing a deeply pigmented, aromatic infusion to develop
DRY & WET ESSENTIALS
- 120g all-purpose flour
- 100g granulated sugar
- 2 large eggs
- 5g baking powder
- 120g unsalted butter, softened
THE NUT PROFILE
60g finely ground blanched pistachios (for the batter)
AROMATICS & SPICE
- 1g ground green cardamom
- 2 ml rose water
- 1 ml almond extract
EQUIPMENT

- 15 cm (6-inch) springform pan

The Atelier Process
Preparations
Phase IPrepare and line the baking pan. Preheat the oven to 175°C. Ensure the saffron infusion is fully developed and ready for incorporation.
CREAMING & FOLDING
Phase IICream the butter and sugar until pale and aerated. Incorporate the eggs one at a time, mixing until fully emulsified.
Gently fold in the dry ingredients (flour, pistachios, baking powder, cardamom), alternating with the saffron milk infusion to maintain a smooth, cohesive batter.
THE BAKE
Phase IIITransfer the batter into the prepared pan and level the surface. Bake for 30–35 minutes, or until a tester inserted into the center emerges clean. Allow to cool completely before handling.
GLAZING & DECOR
Phase IVPrepare a light saffron-sugar glaze and apply over the cooled cake. Finish with a delicate drizzle of concentrated saffron infusion for added depth and visual richness.
PRESENTATION & GARNISH
Phase IGarnish with scattered whole and crushed pistachios, along with a few saffron threads. Optionally add a refined marzipan rose for a sculptural finish.
Present on a muted gold or neutral-toned serving plate for an elevated aesthetic.
