THE COMPOSITION
THE SAFFRON INFUSION
Bloom a generous pinch of premium saffron threads in 40 ml of warm water (approx. 65°C). Allow the infusion to rest for 20–25 minutes, extracting its signature golden hue and delicate floral complexity.
THE FRUIT FOUNDATION
- 4 firm pears (Bosc or Conference), peeled with stems intact
- 800 ml filtered water
- 120 ml dry white wine
AROMATICS
- 1 vanilla bean, split lengthwise
- 1 small cinnamon stick
- Zest of ½ lemon (thinly pared)
- 10 ml fresh lemon juice
TEXTURE & FINISHING
- 40g mascarpone or lightly whipped cream
- 20g crushed pistachios or almond praline
EQUIPMENT
- Deep sauté pan or poaching vessel
- Parchment cartouche (for even poaching)
- Slotted spoon
- Fine strainer
The Atelier Process
Preparations
Phase IIn a wide poaching vessel, combine water, white wine, sugar, vanilla bean, cinnamon, and lemon zest. Bring to a gentle simmer, stirring until the sugar fully dissolves and the liquid becomes aromatic.
INFUSION & LIQUID DEVELOPMENT
Phase IIIncorporate the saffron infusion along with its threads into the poaching liquid. Maintain a low, steady heat, allowing the flavors to integrate into a fragrant, golden bath.
POACHING
Phase IIIGently lower the prepared pears into the liquid. Cover with a parchment cartouche to ensure even submersion. Poach at a very gentle simmer for 20–25 minutes, turning occasionally, until the pears are tender yet retain structural integrity.
REDUCTION
Phase IVCarefully remove the pears and set aside. Increase the heat slightly and reduce the poaching liquid until it reaches a light syrup consistency, intensifying both color and flavor.
GLAZING
Phase VReturn the pears briefly to the reduced syrup, spooning the glaze over their surface to achieve a luminous, saffron-gold finish.
PRESENTATION
Phase VPlate each pear upright in a shallow dish. Spoon the warm saffron syrup around the base. Add a quenelle of mascarpone or a soft cream element alongside, finishing with a delicate scattering of nuts for contrast.
