THE COMPOSITION
THE SAFFRON INFUSION
Gently steep a generous pinch of premium saffron threads in 30 ml of warm (not hot) water. Allow the infusion to rest for at least 20 minutes, drawing out its signature golden hue and delicate floral-metallic depth.
THE GRAIN FOUNDATION
- 320g Carnaroli rice (preferred for superior starch release and structure)
- 1L light veal or chicken stock, kept warm
- 60 ml dry white wine
STRUCTURAL ELEMENTS
- 60g unsalted cultured butter, divided
- 40g finely grated Parmigiano Reggiano (24 months aged)
AROMATICS
- 1 small shallot, finely minced
- 1g saffron threads (from infusion)
- Sea salt, to balance
- Freshly milled white pepper
Equipment
- Heavy-bottomed sauté pan or rondeau
- Ladle for gradual hydration
- Wooden spoon or flat spatula
- Small infusion vessel
The Atelier Process
Preparations
Phase IMaintain the stock at a gentle simmer in a separate vessel. In the sauté pan, melt half of the butter over low heat and introduce the finely minced shallot. Sweat gently until translucent, avoiding coloration to preserve a refined base.
TOASTING & DEGLAZING
Phase IIAdd the Carnaroli rice to the pan, stirring continuously to coat each grain in butter. Toast lightly for 1–2 minutes until the edges become translucent. Deglaze with white wine, allowing it to reduce completely while releasing its acidity.
GRADUAL EXTRACTION
Phase IIIBegin adding warm stock one ladle at a time, stirring continuously. Allow each addition to absorb before introducing the next. This gradual process encourages the release of starch, forming the risotto’s characteristic velvety consistency.
SAFFRON INTEGRATION
Phase IVMidway through cooking, incorporate the saffron infusion along with its threads. Continue the hydration process, maintaining a fluid, wave-like texture (all’onda). Adjust seasoning with salt and white pepper.
EMULSION & FINISH
Phase IOnce the rice reaches a tender yet structured consistency (al dente), remove from heat. Vigorously fold in the remaining butter and grated Parmigiano Reggiano, creating a glossy, emulsified finish. The risotto should flow gently when plated, not hold rigid form.
Presentation
Phase VSpoon onto a warm, flat plate and gently tap to spread naturally. The surface should appear smooth and luminous, with a rich golden tone. No garnish is required—purity of form defines the dish.
